Scicilian Lamb

I have a lot of recipes I need to go ahead and share with you. Last night we had lamb and since it was so easy I still remember the recipe! Sorry, no pictures :(

Ingredients:

1 5-6lb lamb
3/4 of a cup EVOO
2 tbsp Oregano
2 tbsp crushed chili flakes
4 cloves of garlic minced
1 bunch of parsley minced
8 Russett potatoes peeled and quartered

1) Preheat oven to 500F
2) In a medium bowl mix the EVOO, Oregano, Chili flakes, garlic and parsley and make into a paste
3) Rub the lamb with the mixture
4) Cook in oven for 30  minutes until brown.
5) Cover with foil and cook for another 40 minutes
6) Uncover, put potatoes in pan and cook for another 40 minutes until potatoes are tender and meat is at 140F
7) Let sit for 20 minutes

Our favorite part of this recipe was the potatoes. We do have a Rosemary/Thyme lamb recipe that I think we both prefer. This was good but spicy due to the chili flakes. We didnt have chili flakes so we used crushed red pepper. It also didnt make much of a paste. I kept adding everything but the chili and the EVOO and it got better but that is about it. Because it wasnt a full paste the oil caused steam/smoke so our kitchen got very smokey.

We will keep it in the file as an option though. It is VERY easy, the ingredients are all staples except for the lamb and you can't go wrong with lamb :)
