Easy Sausage Bake

Brian and I found a sale on stuffing. We love stuffing. It is just about the best dish on Thanksgiving except for maybe twice baked potatoes. It was 5 boxes for 5 dollars. We got 5 boxes. Last week I was looking for things to buy to create a cheap, good, plentiful meal. I found two recipes on two of the boxes of stuffing. One box was the regular turkey stuffing the other was one designated for pork. Both very easy, cheap and good. I forgot to take pictures of the turkey so that post will wait until I make it again but I did remember to take pictures of the pork.

Ingredients:

1 red pepper diced
1 green pepper (the store didn't have green so we used yellow) diced
1 box pork stuffing
1 2/3 cup hot water
1 15 ounce can of tomato sauce
1 onion sliced (we diced ours)
1 lb sausage (we used the chicken sausage we get at costco)

Directions:

1) Preheat oven to 400F
2) Mix stuffing with 1 2/3 of a cup of hot water until moistened
3) In a pan, saute sausage until brown and drain
4) Add sausage back into pan and add the vegetables
5) Cook, stirring occasionally, until vegetables are crisp and tender
6) Put sausage mixture in a 9X13 pan
7) Pour tomato sauce and stuffing over top
8) Cook for 25 minutes or until heated through
