Stewed Apples

Brian and I got this recipe off of a show called "5 Ingredient Meals". The other recipes in the show were stuffed pork chops, fried candy bars and a rice recipe. This was the best and biggest surprise out of all the recipes. The pork chops were good but it was kind of expected. This recipe also could not get any easier and can't taste any better. Sort of tastes like the inside of an Apple pie except healthier!

Ingredients:

3 tablespoon butter
1/2 butternut squash, peeled, seeds removed and cut in 1 inch chunks
Kosher salt and freshly ground black pepper
3 Granny Smith Apples, peeled cored and chopped into 1 inch chunks
1 cup water
1/4 cup brown sugar
1/2 teaspoon ground cinnamon






Directions:

1) Heat the butter in a large heavy saute pan over medium-high heat
2) Add the butternut squash and salt and pepper to taste
3) Cook until the squash is beginning to caramelize, about 6 to 8 minutes
4) Add the apples and continue to brown, another 5 minutes




5) Stir in 1 cup of water and the sugar
6) Cover, then reduce the heat to medium-low and cook until tender
7) Add the cinnamon and cook until the squash and apples are coated in a deep golden brown glaze, about 5 minutes more
8) Transfer the stew to a serving bowl and serve

The times are approximate. The first time we made this we accidentally cooked it too long due to our timing with the rest of the meal. It really tasted like apple pie filling then but that was okay :) Who doesn't like apple pie filling? The second time on Valentines day we were careful with the times and noticed it took less time to cook then the recipe indicated. The apples are going to be soft/mushy but the butternut squash should be tender; not mushy or crunchy. YUM!
